mircea_popescu: anyway, re the cheese, as apparently it's unknown other than "that south transylvanian cheese" : sheepmilk cheese is cut up thinly, salt is added and ths is mixed (often, by hand). the result is placed in a tube made out of pine bark. it may or may not be smoked. it can also be placed in a sheep's stomach. inthis arrangement it keeps indefinitely, it is geenraly consumed after about a year.
mircea_popescu: gets stronger the longer it waits, of course, but the salt doesn't get it runny.
